Biscoff Spread is the Bomb–and Vegan

Biscoff Spread, I'm in loveSomething wonderful happened to me at the Fresh and Easy grocery store the other day. A small red and white jar caught my eye and I wandered over to look at it and I swear I heard angels sing.

THERE IS SUCH A THING IN THE WORLD AS BISCOFF SPREAD. I couldn’t believe my eyes.

If you’ve ever done any traveling by air you may have come across the little Biscoff cookies they sometimes give out. They taste so incredible. In fact, because I have done much travel in recently I was giddy to find those cookies in my local Rite Aid. The downside is when you have a whole package of something you love but has heretofore been inaccessible you tend to over indulge. In my case, I’d eat nearly the whole package in one sitting only stopping because of the nausea setting in.

However this was different. It was Biscoff Spread. And despite an expensive price tag I bought it. Oh, the best part–it’s also vegan. So other than the calories, there’s no guilt either. And it tastes just as wonderful as the cookie, only you can spread it on apples to pretend that you’re doing something semi-healthy for yourself.

The spread also goes a long way if you put it on toast. It heats up from the warmth of the toast and becomes runny and gooey like caramel. I can’t tell you how awesome it is, you just have to go buy a jar yourself.

Oh and by the way, I’m totally not being compensated by Biscoff in any way, but attention Biscoff I would gladly be your spokesperson!

I will never be a size two but I think I’m fine with that

OK I’ve had it–if I hear one more time that Kate Upton, this year’s Sports Illustrated Swimsuit cover model, is “full-figured” or a “bigger-sized” model, I’m going to crack the skull of the person saying it with my more than full-figured fist. Unfortunately, my husband was the latest person to say this in an ill-but-well-intended-attempt,Continue Reading

Is honey vegan?

There is no other way to say it: I am unreasonably afraid of bees. Like super, psychotically, pee my pants, jump out of a moving car, afraid of them. And it is ENTIRELY their fault. Whenever there are bees around, they come at me with their zig-zaggetedly crooked way of flying taunting me, like, “MaybeContinue Reading

Vegetarian homemade granola bars

Here’s another one for the kids. Since really delving into a plant-based diet I’m really seeing my kids’ diets for what they are.  I mean I’ve eaten a vegetarian diet in some form for several years now. So my family has too. But sometimes that meant junk-food vegetarian meals. You know, meals that don’t haveContinue Reading

Quinoa black bean tacos

It’s a huge challenge to constantly find vegetarian meals that my entire family will be satisfied with. Sometimes the meals I create miss the mark something terrible. There are lots of “yucks” and “I’m not eating THAT!” And yeah, it’s disappointing to me. Other times, things just hit. This was one of those recipes. MyContinue Reading

Finally making progress!

When I was young I actually had a problem gaining weight. I know huh, what a problem to have right? I cried over it. I tried everything I could to gain weight to no avail. I was teased for being so thin. I was told by a lot of “well-meaning” people that I must beContinue Reading

I’m being held hostage by fat

It sounds weird but I’m loving my arms right now. They are interesting–lean with lots of definition. I think I’m digging them because they look like someone else’s. It’s so awesome! So excuse me a minute while I touch my biceps a little more …. OK there. The thing is, my arms are one ofContinue Reading

Get up and just move!

Today I have two choices. I can catch up with all the work I have to do at my computer e.g., pay bills, write blog posts, finish client projects, work on my website etc., or I can get up and take my kids to the park or work on my yard. Everyday we are facedContinue Reading

One pound down, 19 to go

After a week and a half of solid work I’ve lost a pound. One pound! I’m a little disappointed but excited at the same time. So I know that’s a healthy amount to lose but when you are busting your butt on diet and exercise you expect a little more. However, I’m happy that somethingContinue Reading

Weightloss training at Anytime Fitness

So recently something came to my attention. It was my fatness. Fat is a relative term I know. For me it’s when I wake up one day and realize that I am 12 pounds heavier than I was last year.  Fat for me is not just knowing that I no longer fit into my skinny jeans thatContinue Reading
